I just discovered you - through a link to the NY Times article on the Bacon Explosion - what a brilliant concept! My brother, who I'm sure was the originator of the term Lard Ass, as in someone saw him and those words flew out of their mouth, is having a birthday soon and I plan to make a few of your recipes for him - including the Bacon Explosion. He's a big ol' boy who would bleed Crisco so I know he'll love it and I'll love fixing it for him. Thanks for the great read - I'll be back soon! xo, Nan

@Nate - Thanks! About the smoker, you can just slide open the top pretty easily and use a thermapin, it lets a bit of smoke out but nothing major.

And yep, you can do ribs in it as well. I think I got 2 racks in there when I did it.

I really like your site. Your writing is great and your pictures are fantastic!

Question about the stovetop smoker - how do you check the temp of the chicken if you seal the cooker?

Another question - can you do ribs in it?

Thanks for adding us as a friend on Foodbuzz. We welcome you to come visit our site!
